directions

  • In soup pot, cook and break up ground beef.
  • Add onion,basil and beef broth.
  • Bring to a boil.
  • Add potatoes and green pepper.
  • Cover and simmer 12 minutes.
  • Bring back to a boil.
  • In saucepan, melt butter and stir in flour.
  • Cook 2 minutes.
  • Add to soup, stirring.
  • Reduce heat to low again and add cheese, cream and pepper.
  • Stir until cheese melts.
  • Serve.

  1. I am delighted to be able to add this wonderful soup to my collection of soup recipes. In the fall and winter, I make soup about once a week. A bowl of soup, along with fresh fruit or a crisp salad is our usual lunch in our retirement years. The only change I made was using a large can of condensed milk instead of the cream, for that is what I had on hand. Thanks, Inez, for a "keeper."

We will have this often thru the winter...Thanks for a Great Recipe...<br/><br/>Updating this for Cook-a-thon...it's still a 10star recipe & one I make on rotation thru the fall & winter months..had it again & each time it seems to taste better than I remembered.   5. Very good soup! Is there a typo on the roux ingredients? It says 4 teaspoons of butter and flour, but I really think it should be 4 Tablespoons of butter and flour. My first try came out very thin when I did 4 teaspoons. But that may be because I used 2 cups of lactose free whole milk in stead of the light cream (because of personal issues with cream). I also doubled the amount of cheese called for so, the flavor of the cheese would come through. Will definitely make again.

  1. I have to change my comments, because I just made this soup again with some a few modifications, and wow! I added oregano and thyme with the basil, used 1 cup heavy cream and 1 cup milk, added some pasta with the potatoes, and used cheddar cheese instead of Velveeta. This made this soup even better!! I highly recommend the use of heavy cream and cheddar cheese. But even without them, this soup rocks!
     
  2. Made this with skim condensed milk instead of the light cream and it turned out great. A bit mild for my taste, and that of my friend I gave some to, so added about 1/3 c. of dijon mustard for a little kick, as we like mustard on our burgers. Could be added at table for individual taste in family, too. I'll make it again!
     
  3. Another excellent recipe from our own MizzNezz! I made this for a light supper and it was devoured by all! I used a red bell pepper instead of green as that was all I had in the refrigerator and I also substituted 2 cups vegetable broth w/2 beef bouillon cubes for 2 cups of the beef broth. Very easy to put together and highly recommended by this chef! Thanks for another tasty dish, Nezz : )

After DH and I moved away from the farm, and to the city...I haven't done as much cooking and very little canning. But I do come to Zaar and look for new recipes once in a while. I'm still cooking Zaar!! I like to play at Facebook, with my family and friends. A lot of my Zaar friends are there!! Yay! It's a good way to keep in touch. We travel more. We're looking at the European trips now. Hope to go in the springtime. I really want to see London, I think I lived there in a past life, I've been obsessed with it since I was 10 years old!!
