  • Grease a 19cm square cake pan (or similar sized round pan), line base with baking paper.
  • Heat oil in large pan, add bacon, onion and garlic, cook, stirring until onion is soft.
  • Add vegetables and cook, stirring, about 5 mins or until any liquid is evaporated; cool.
  • Combine vegetable mixture with sifted flour and remaining ingredients in a medium bowl; mix well.
  • Spread mixture into prepared pan.
  • Bake in moderate oven for about 30 mins or until firm.

  4. I needed to use up some ham and tomatoes so added these instead of carrots and bacon. I baked at 180C for 30 minutes. Lovely, easy recipe which I will use often. A great way to get veggies into kids without them realising! Thanks for posting.
     
  5. Delicious and easy. I didn't have any garlic cloves on hand, so I used 2 teaspoons of minced garlic instead. Also, my eggs were really small (compared to what I would normally use) so I used an extra egg, plus I snuck in some salt and pepper with the egg. It was so yummy, there wasn't any left to try it the next day! It would be so easy to make with a blender to grate and slice the veges. This is a great summer dish and would be perfect to take for pot luck.

Hello...I live in Australia and work as a registered nurse. Nursing 19 years now. In my spare time, I enjoy going for walks (especially along the beach),going to the movies, reading, pottering about the house/garden, collecting/trying out new recipes and of course, visiting friends and family. In the future I would love to do some more travelling. Last year I visited my sister and her husband in Canada - what a beautiful country...definitely want to go back!
