Cheesy Barbecue Beef

- 1 lb ground beef
- 1 (12 ounce) can whole kernel corn, drained
- 1 cup barbecue sauce
- 1 tablespoon chili powder
- 1 (2 7/8 ounce) can French-fried onions
- 1 (8 ounce) jar pasteurized cheese spread
directions
- Preheat oven to 350 degrees. In a large skillet brown ground beef; drain. Stir in corn, barbecue sauce, chili powder and 1/2 can of the onions.
- Pour half the meat mixture into a 1 1/2 quart casserole; cover with half the cheese spread. Repeat layers.
- Bake, uncovered, at 350 degrees for 20 to 25 minutes or until heated through.
- Top with remaining onions, bake, uncovered, 5 minutes or until onions are golden brown. Serve over buns, corn bread or rice if desired.

This is really tasty! I'm giving it 4 stars because it is not something we would want to eat often- maybe just when I'm short on time occasionally. Most of the ingredients are atrociously processed; I made some tweaks by using home frozen corn- thawed, and instead of cheese sauce I just sprinkled on some shredded cheddar. The taste is very rich, so much so that next time I might use half the onions; just sprinkle some on top and don't mix any in! But yummy! I served with cornbread on the side.

I am married, with no children. We wish that was different but I guess it wasn't meant to be, We do have an adorable rescue dog, an adult Shitzu-Poodle mix. We also get to spend time with our nieces and nephews (when they're not too busy haha!) My husband is a great guy, I can't imagine life without him. He works works very long hours. He is the best guinea pig, he enjoys trying all the recipes I make and loves leftovers. I am a self-taught cook, my mother wouldn't let us in the kitchen while she was cooking when I was growing up...it was her domain. I enjoy making people happy with the foods I have prepared for them.
