  • Saute green peppers and onions in margarine.
  • Add cream cheese and stir until melted. Add Velveeta, milk and corn.
  • Heat until melted, stirring occasionally.
  • Garnish with thin strips of red pepper and cilantro.

  1. For being so easy, this is very good. Cheesy with a little sweetness from the creamed corn. I used a red bell pepper and saved some for the garnish. This is a good soup for kids. Thanx for sharing.
     
  2. Was wonderful but for people who added ham was a ok idea but if you put chorizo or any breakfast sausage it gives it a much more authentic flavor! The Mayans I don’t think used ham!!!! My son in law is from an Aztec heritage much like the Mayans and it is more beef than anything maybe chicken so actually it should be flavored with beef or chicken and a couple of old Aztec hot peppers! Not what we think of hot peppers but authentic flavor is authentic flavor!!! My son in law grew peppers from his home in Mexico and I have never tasted flavors like he incorporated! I am in awe and that why I am saying the soup doesn’t need ham or bacon it needs authentic beef and peppers. Take my word for it!! I will update how I had him help me and send an update to how you can make this soup totally Authentic!!!!!
     
  3. This is a very easy recipe and is very good. A little on the heavy side. I added some diced smoked ham to introduce some contrasting saltiness... Will defantly make again.....

I wasn't sure if I liked it after the first bite, but after a little salt and pepper it was divine.I doubled up the onions and used about 28 ounces of corn, making the soup thicker, which I enjoyed. I also used shredded cheese because that's what I had, but it worked fine. My boyfriend said this might be the best thing I've cooked for him so far. Thanks for the recipe!
