Cheesy Pasta Bake

"Didn't have much in the house, and wanted something with pasta, so I invented this. My 15 month old loved it, as did my husband! I made this with rotini as that was all I had on hand, you can use whatever pasta you prefer. You can also add more tomatoes if you like more of a chunky sauce. This could also be made with a Jar of spaghetti sauce, or whatever your favorite sauce is. Can also add in ground beef."

  • Chop up the tomatoes, onion and garlic, put them in a small sauce pan and saute until onion and garlic are translucent. Add in the Tomato sauce, as it starts to boil use a potato masher and mash up the tomato's a little more. Add the remaining sauce ingredients, and allow sauce to simmer for about 15 minutes. This can be done ahead of time.
  • Cook the Noodles according the directions on the package. Once done drain and put them back in the pot.
  • Pour the sauce onto the noodles and stir. Then add in the Parmesan Cheese and combine.
  • Preheat the oven to 350 Degrees.
  • Pour the mixture into a slightly greased 8x8 Pan. Pour 1/4 cup water down over the noodles. Top with the Cheddar Cheese, and cook for about 15-20 minutes or until cheese is melted and bubbly.
  • Let it cool a minute before serving.

We have an adorable little boy who was born in June of 2008. And we all enjoy eating fresh homemade meals together, and my dear hubby and I enjoy cooking side by side for big family functions. DH is an amazing cook, and is the only person I allow to touch a grill! lol! I hope our son inherits his Dad's cooking abilities!
