ingredients
- 2 cups steamed rice (hot or cold)
- 1 cup sour cream
- 1 cup grated cheddar cheese (sharp is best, but use whatever you have)
- 1 teaspoon cayenne pepper
directions
- In a greased baking dish, mix together all ingredients.
- Bake at 350 degrees until heated thru and cheese is melted.
- About 20 min or so. Dig in!

Yummy!!!! We loved this! I didn't have cayenne but just sprinkled some Emeril's Essence. I also used some salt and pepper and topped it off with a little more grated cheese. Wow! Perfect pared with grilled porkchops and grilled brussel sprouts (Alton Brown's recipe). Turns hard leftover rice into a super quick side dish. Just what I was looking for!

I doctored up this recipe adding a full rottesirie chicken shredded, a full bunch of steamed crisp asparagus cut to bite size pieces. 1/2 tsp cayenne pepper, 1 tsp each garlic powder and onion powder with some cracked black pepper. I doubled the rice ingredients. I also added French fried onions on top. Baked at 350 for about 30 mins. Delicious

Add all ingredients in a fry pan and do the same. keep on low heat at first till cheese melts, and watch that you dont form a cheesy skin, unless you like that..stir well.... Fantastic recipe for rice cheese and you can also add small bacon strips....similar taste to spaghetti carbonara... YUM! Cooked this while my wife was away...no mistakes .. too easy....
