Cheesy Spinach Squares

"If you are a spinach lover you will really enjoy these, I like to add on some shredded cheese on top after baking but that is only optional."

  • Heat oven to 350 degrees F.
  • Butter a 13 x 9-inch baking pan.
  • Place the butter in the prepared baking dish, and melt in the oven; remove pan and set aside.
  • In a large bowl beat the eggs thoroughly.
  • Blend in flour, half and half, cayenne, garlic powder and Parmesan cheese seasoning salt, black pepper and baking powder.
  • Add in 2-1/2 cups grated cheddar or mozzarella cheese, green onion and spinach; mix well.
  • Spoon the mixture into baking dish on top of the melted butter, and level off.
  • Drizzle the top with 2 tablespoons melted butter.
  • Sprinkle with grated Parmesan cheese.
  • Bake for about 30 minutes or until golden brown and set.
  • Remove from oven, and cool for 40-45 minutes.
  • If desired you may sprinkle about 1 cup shredded cheddar or mozzarella cheese immediately after baking.
  • Cut into squares.
  • Note: these squares freeze very well.

  1. These are wonderful! I didn't add extra butter to the top, I just used what rose to the top. I did leave out the cayenne pepper and used 1/2 the black pepper so my kids would eat it, but I wish I could have put them in since I love spicy. I would make these again and I think they would make a great potluck item.
     
  2. hey! not sure how I missed reviewing this one, as i make this ALL the time. I make it exactly as described and it comes out perfect every time . .. the crispy edges are the best part, though, so make sure not to take it out of the oven too early! Delicious and re-heats well too.
     
  3. Like every one of KITTENCAL's recipes that I've made, this was fabulously delicious. I made a few small changes to meet our taste preferences: I omitted the cayenne pepper, and added instead some nutmeg and lemon zest (as suggested by MarraMamba, though these were exactly the additions I would have made!). I am not sure what seasoning salt is; I used garlic salt and added 4 cloves of finely minced garlic instead of the garlic powder (we love our garlic). I also added a cup of finely chopped baby spinach leaves to the packet of spinach (we also love our spinach) and added the optional extra mozarella in step 12, naughty (in terms of fat content) but delicious. We thoroughly enjoyed this. NOT an everday recipe - because of the high fat content - but one we'll enjoy again when the mood strikes! We had enough for two freezer meals. These didn't have the extra mozarella added. Thanks for sharing another great recipe, KITTENCAL!
     
  4. These came out really good and cheesy. I found that it seemed like way too much butter though. I ended up pouring it off during the baking process. Some folks didn't appreciate the cayanne kick, so maybe next time I'll use a different spice. It's a keeper though
     
  5. These were good, easy too! I was hoping for a little more flavor, but next time I'll just add more salt, pepper, cayenne, parmesan. I did freeze some leftovers, so we'll see how those turn out! Thanks!
