  • Stir the soup, mayo and lemon juice together.
  • Layer in a small casserole dish:1/2 chicken, ½ cheese, 1/2 broccoli, 1/2 sauce.
  • Repeat Bake 45 minutes at 350F.

  1. This is a neat way to fix Chicken 'n Broccoli, Barb! Easy to put together, and, best of all, with ingredients I have most of the time anyway! The taste is just real good! My SIL gave me a microwave version for this, and it's really tasty, but, I shore like yours!! Thanks for posting...I definitely will make it again! Laudee
     
  2. Wow, what a great dish! I didn't have frozen broccoli, so I steamed some fresh. I think the dab of mayonnaise and lemon juice made the soup taste better. I might even add more lemon juice next time. This dish is so easy to prepare, and tastes wonderful. Thanks, Barb for posting it. Definately a keeper to be used again.
     
  3. This one is a keeper! I used frozen chicken breasts and they were rock solid when I started. After boiling for 25 minutes, they were at a temp just above 200 degrees. So I would check the breasts after 15 minutes with a meat thermometer, and then every few minutes thereafter so you don't overcook the chicken. I added fresh ground black pepper to the sauce. I used a round dish about 4 inches deep and 6 inches in diameter and it was perfect. It doesn't say what to do with the chicken exactly, so I decided to shred it into bite size pieces with two forks. On the top, I added a layer of Pepperidge Farm seasoned stuffing mix and sprayed it generously with cooking spray (melted butter tastes best but I was trying to keep the fat down). I baked it uncovered. All of my changes/additions worked out really well. Thanks for the tasty, easy recipe, Aroostook!
     
  4. I loved the idea of the recipe - however, the msg in canned soups turns me off. I substituted organic chicken broth and added arrow root (thickener) and some sauteed shitake's in butter - turned out wonderfully!
     
  5. I thought this was a great recipe. Easy to make, but it seemed a little dry. I doubled the sauce and that made it better in my taste. Overall great dish.

Zaar...Wow, what a place! I'm one of the old timers of Zaar. I can't count the number of wonderful dishes I cooked in the past few years since joining. Along the way I have had the pleasure of meeting several Zaar chefs. Talk about your fruits and nuts! lol. I have enjoyed meeting them all. Family: What's to say...I have had the same sweet husband forever (Good thing....I'd hate to have to break a new one in...=) and live close to a couple of grown children. (Maybe you've met Smoke Alarm Jr. ..her brown rolls are sooo good!) Therefore, my family gets together often to enjoy each other's company and cooking. My greatest joy is six "little to tallerthanme" kids running around calling me Grammy. They wear me out! lol For the past thirty years I have been a Special Education teacher for grades 9-12 and love it. Took some time off last year to recovery from surgery, chemotherapy and radiation for breast cancer. (Loved the radiation....I keep imagining that we are absolutely napalming the nasty cancer cells tohellandback to keep the little suckers from returning. =) My prognosis is good and now "I'm back in the saddle again". lol. Being a north country "gurl", I am happiest outside...walking, fishing, sitting in front of an outdoor fire or being on water (although in February it's a bit stiff....=0) When indoors I like to read, garden, knit, quilt and paint. During cold Maine weather I like to warm my feet on a very large ( 100 pounds of long legs and huge feet), sweet and furry golden retriever named Kerry (aka KTBRD: Kerry the big red dawg..lol) . In the summer, the dawg and I round up the grandkids, hit the local dairy bar for a Mounds Sundae that is to die for!!!=0) . Then spend a lot of long and lazy summer days at camp . All in all...Boy, Life is good! =)
