Chicken and Broccoli Casserole

  • Combine chicken, cream of chicken soup, lemon juice, mayonnaise, and broccoli.
  • Pour into a 9x13-inch pan.
  • Sprinkle with parmesan cheese and bread crumbs.
  • Bake in a 350°F oven for 45 minutes.

  2. I used frozen, corn, broccoli,red pepper. For the cheese I used Mozzarella/Parmesan. Are you using grated or fresh Parmesan? My fresh became brittle. We enjoyed.
     
  3. This casserole is just really good! It's super-easy to mix together, bake, and serve. I cut back and used 3 breasts and 1/2 a package of frozen broccoli as there are only two of us here and we had plenty! Thanks for posting a true comfort food. We enjoyed every bite! Laudee C.
     
  4. WOW!! I have had casseroles before but this one is GREAT!! Though i had added 8 OZ of velveeta and 2 cups of rice I still loved it...The rice and cheese makes the servings bigger but My husband doesn't like greenery or chicken, but he took a bite and ADDED more to his plate!!! LOL Thanks Simmy
     
  5. Pretty good recipe. I made this for Thanksgiving and used fat free mayo, crumbled Ritz crackers on top and used Fat free cheese on top. It came out to about 375 calories (4 servings in pan) per serving.

  2. I love this dish myself but I make it 5 star by doing a few things different. I use a can of cream of mushroom and a can of cream of chicken instead of chicken soup. I also use Miracle Whip instead of Mayonnaise. I find it adds a little extra tang in there. I also top mine with crushed Ritz crackers instead. I don't usually like Ritz crackers or Miracle Whip, but the tastes of both aren't too prominent. The crackers make a WONDERFUL crust by sticking with the cheese. Of course I used Cheddar Cheese on mine enough to cover the sauce then added the crackers. Also wanted to add that in a quick fix, you can used canned chicken instead of having to bake it. Just put the can of chicken right into the mix and use frozen broccoli in the bag that you can steam in the microwave. Takes 5 minutes! Also, rotissiere chicken is good as well!
     
  3. This was wonderful..another one of those recipes that everyone loved(2 adults and 5 kids under 10). I did use homemade cream of mushroom soup instead of the cream of chicken soup. I also added about 2 cups of brown rice. I put the brown rice on the bottom, then chopped up broccoli, then chunks of chicken, then poured mayo/soup mixture over top and put ritz crackers on top. I also baked the chicken first with garlic. Because of the homemade mushroom soup and the seasoning in it this had a wonderful taste to it. I will make this over and over using the cream of mushroom soup.
     
  4. Great! I sauteed the chicken in olive oil and lemon also and added onion and red pepper-I can't cook anything without Onions!!! When I put the cooked chicken mixture in the casserole, it looked so good I almost stopped there!!! But I added the rest, and used Ritz crackers instead of breadcrumbs.
     
  5. This was soooo good and soooo easy--a no fail, busy mom perfect meal. I served it over wild rice, used fresh broccoli, chicken tenders (cooked first) and fat free cream of mushroom soup instead. Great!

I'm a stay at home wife. Love house work, believe it or not... I love music, have loads of cd's, i especially like the "Golden Oldies" Love to cook as long as the recipe is easy to follow and don't take me to long to prepare..What can i say !!
