Chicken and White Bean Chili

"Not your traditional chili! This is a super simple yet surprisingly flavorful recipe. I make this in the crock pot at least twice a month, but it can also be done on the stove top. My kids (who all dislike beans) love this dish, and there are rarely any leftovers. Great as is for those who prefer milder dishes, but easy to spice up with some Cholula or Tabasco."

  • Place chicken in lightly sprayed crock pot.
  • Add onion, garlic, and green chilies.
  • Rinse beans in cold water, drain and add.
  • Add oregano and cumin.
  • Add chicken broth, stir to mix.
  • Cook on low 6-8 hours or 2-4 hrs on high.
  • Before serving, shred chicken with forks.
  • Chili will be thin. Mash some of the beans to help thicken, or add some flour or cornstarch to suit.
  • Serve with shredded cheese and / or hot sauce to taste.
