Chicken Curry

  • Heat butter in large frying pan.
  • Add onions and cook for 5 to 6 minutes over medium heat, stirring occasionally.
  • Lower temperature to low.
  • Mix in curry powder and cook for 3 to 4 minutes longer.
  • Add chicken and stir; season to taste with salt and pepper.
  • Cook 2 to 3 minutes over medium heat.
  • Pour in chicken stock and bring to a boil.
  • Continue cooking 9 to 10 minutes over medium low heat.
  • Mix cornstarch with water; stir into sauce.
  • Cook for a minute or so to blend.
  • Pour in cream and bring to boil.
  • Simmer for 2 to 3 minutes.
  • Arrange chicken on serving platter.
  • Sprinkle with parsley and olives.

Tweaks

  1. I have never made a curry before so used this recipe to try one out. However, I did make some changes. I added celery and carrots when I was cooking the onions. Instead of cream I used a can of coconut milk.I used another tbsn of curry and added potatoes. Although it wasn't the same as what you posted, mine was really good.

I live in the San Francisco area and love it here. I discovered Recipezaar (then Food.com..Genius Kitchen) in 2001 and have been so happy to have my favorite recipes stored safely here. I am mother to 7 and grandmother to 7. I love to knit, smock, sew, etc., but my favorite hobby of the moment is traditional rug hooking. This is a sample of what I do.? It's called "November".? I dyed most of the wool myself. It is made from wool flannel, cut into strips a little less than 1/4" and then worked into a linen backing. This is my 3rd rug.
