Chicken Divan

"This recipe is very good served over pasta or rice. I have also used turkey instead of chicken so bear that in mind when you want to use up leftover turkey."

  • Cook broccoli in salted water until just tender.
  • Drain.
  • Place in a 12x8 baking dish.
  • Melt butter in saucepan; blend in flour.
  • Add chicken broth all at once and cook, stirring constantly until mixture thickens.
  • Stir in cream and wine.
  • Season with salt and pepper.
  • Pour half the sauce over the broccoli.
  • Top with chicken slices.
  • To remaining sauce, add 1/4 cup parmesan cheese and pour over chicken and sprinkle with additional cheese if desired.
  • Bake in 350 oven for 20 minutes or until hot.
  • Then broil until top is golden brown.

  1. This is really easy & really yummy! I do always add a couple of tsp of curry powder & put some bread crumbs on top for texture. I didn't notice any floury taste when I forgot to add curry one time, but it definitely wasn't as good.
     
  2. I made this last night with some leftover BBQ chicken and it was really good. The sauce tasted like it had a little too much flour in it...so next time I will use a tablespoon less. I added curry power to combat the flour taste and put paprika on top. It's nice to have a chicken divan recipe that doesn't rely on a can of soup. Thanks.
     
  3. AMAZING! Well, I didnt follow the recipe from A to Z.. I used it as a base. The only difference I did was add some chopped green scallions and some chopped garlic to the sauce mixture. I totally agree with what the other guy said about can of soups. I really loved the flavor of this sauce, I could just drink it on its own.. well maybe not but it really is yummy. Oh, and I used Riesling for the wine. Mmmhm YUM-O! P.S I gave it a 4 because i added the garlic and scallions myself.
     
  4. Worked great. I used whole milk instead of the half and half and it turned out just fine. Thanks Bert. Yours was the only "Chicken Divan" recipe without a can of cream soup in it!!! (I am a firm believer that real cooks don't cook with cans of soup)

I love to cook and so I am thrilled that I found recipezaar. I work as an educational assistant in a food school so I am around food all day long. I have four children, three of which have already flown the coop so to speak but I still have my 'baby' at home. (He's 21). I am lucky in that I have my summers off so I spend a lot of time trying new recipes and catching up on my reading. I also play soccer in a ladies league to stay in shape.
