Chicken Fusilli Toss

- 4 ounces fusilli
- 2 tablespoons extra virgin olive oil
- 1⁄2 lb boneless skinless chicken breast, cut into small strips
- 1 1⁄2 cups red capsicums (or both) or 1 1/2 cups green capsicum, cut into thin slivers (or both)
- 2 green onions, minced fine
- 1⁄8 cup raisins
- 2 1⁄2 teaspoons ginger, minced
- 2 -3 garlic cloves, minced
- 1⁄2 cup pine nuts
- 1 dash cayenne pepper
- 1 tablespoon soy sauce
- 1 1⁄2 tablespoons fresh lime juice
- salt and pepper, to taste
directions
- Take out a large pot and cook pasta according to directions.
- Meanwhile, In a wok or a skillet, heat oil and saute chicken with capsicum, onions and raisins for 3-5 minutes, until chicken is done.
- Add ginger, garlic, and pine nuts and cayenne and toss.
- Add soy sauce and lime juice, and remove from heat.
- Drain your pasta; do not rinse it!
- Put pasta in a large bowl and pour chicken mixture over pasta and lightly toss.
- Add salt and pepper to taste and serve immediately!
- Add more soy sauce and more cayenne to your tastes (I use a lot more cayenne!).
- ENJOY!

This was absolutely excellent!!!! A few modifications I made were a) dried cranberries instead of raisins, b) mixture of nuts, including pistachio, pine nuts, sunflower seeds, peanuts & chopped almonds, & c) Emeril Lagasse's Essence ~ Recipe #14372 instead of cayenne & more than just a dash. We will definitely be adding this to our meal rotation!!!!!

My husband and I thoroughly enjoyed this meal. I used a different pasta (I forget what it is called, but it looks sort of like penne pasta) and i omitted the rasins and pine nuts because I didn't have any on hand. I definately put in more than 1 dash of cayenne and hubby loved it but it was a tiny bit too hot for me. I might limit it to 3 dashes next time, but we will definately make this one again. I especially liked it because all of the ingredients are things I normally have on hand. Thanks for posting this.

We loved this quick, tasty pasta toss!!The fresh lime juice and cayenne gave a wonderful,fresh,almost Mexican taste, and yet it has a very Mediterranean taste with the ginger, raisins and coloured sweet peppers and of course the galic. Overall a very delightfull meal which we will be making again and again. Thanks for sharing a keeper!!

Was a nice and quick meal fix and I had fun making it with my DS (5 YO) Liked the use of lemon juice. :) Omitted the dry fruits though. Added a homemade spice mix which is a blend of pepper, aniseed, cumin and coriander too. Topped with cheddar (my son loves cheese) DS and me enjoyed eating it too :D Thanks for posting. :) Fay

Since April 2008, I have been a vegetarian. I dont eat creatures...that's the easiest way to put it! :D
I still eat a small amount of dairy, but not very much.
