Chicken Ghiveci (Romanian Braised Chicken)

ingredients
- 3 tablespoons olive oil
- 1 medium onion, thinly sliced
- 5 garlic cloves, minced
- 2 red bell peppers, deseeded and sliced
- 1 kg chicken piece, or cut-ups
- 1⁄2 cup tomato paste
- 2 large potatoes, diced
- 1 pinch dried thyme
- 1 pinch dried rosemary
- 2 carrots, chopped into chunks
- 1⁄2 cup dry white wine
- 1 pinch sugar
- 1 pinch salt
- 1 pinch pepper
directions
- heat oil in large wok or casserole pan until hot enough to cook.
- add onions and garlic stir frying 1 min until soft.
- add bell pepper and stir fry for 1 minute
- add chicken cut ups and brown both sides 10-13 minutes.
- add rest of ingredients, stir fry for 1 min then cover and cook for 40-45 mins until the chicken looks cooked and there's no blood when pierced by a fork near the bones.
- garnish with thyme or rosemary (optional) and serve with bread or rice.

Absolutely delicious! Complete comfort food and its really easy to make! Cut the chicken breasts into 3 and added a little water to make it cook through. Chicken came out so tender and juicy. Served with a thick slice of wholegrain granary bread and you've got a delicious easy meal! Definitely recommend and will make again!

This is comfort food! It's very pretty and tasty. I added an additional 1/2 cup chicken stock to make it more saucy for the rice. Also, since I used chicken breasts, I didn't plan on it cooking as long as if I'd used a cut up chicken or parts, so I cooked it about 15 minutes once everything was added. It has great flavors! DH was the only one who liked this dish. I thought it tasted OK but it wasn't really to my liking. I cooked it 45 mins as stated but the potatoes weren't done. Cooking it for that long made the chicken dry & a little tough. If I was to make again I would cook the potatoes before hand then add them, cutting the cook time in half so the chicken would be juicer.

MADE FOR ZWT 4. This is our dinner dish for tonight, but it's been tasted and pronounced a delicious, down-home, stew-type garlicky dish which we always enjoy! It's not haute cuisine; it's warming home fare. I could not find 2 red bell peppers, only packets with 3 colours, so I used a yellow and a red. I made no real changes to your recipe except I added more herbs, as I felt a pinch of each was not enough! I also added a tiny splash of water as my tomato paste was very thick, and I added more salt than a pinch! Thanks for a delightful dinner!! I'll make brown basmati, fresh veggies and a salad to go with it. Thank you!!!
