Chicken Meatballs

"Quick & Easy!! Baked ground chicken meatballs with jack cheese in them - These are REALLY good!!! The original recipe said to serve with spaghetti sauce and angel hair pasta but quite honestly, I think they are too good alone to cover with sauce! Tonight we will have them with stuffed zucchini and salad - Yum Yum !!!"

  • Saute garlic and onion.
  • Mix with all other ingredients.
  • Form into balls and place on cookie sheet.
  • Bake 400 degrees for 16-18 minutes
  • (We use an ice cream scoop and get about 12 meatballs, you can roll them and get 24 or so). Servings are figured on making 12 meatballs, 3 per person.

  1. These were good, not fantastic. I found that two tablespoons of breadcrumbs were not enough. The mixture was very wet. I added a total of 6 tablespoons. And even though I am not a salt eater, it needed salt. I will make them again, but will add a quarter teaspoon of salt.
     
  2. I made these last night with a couple differences, not because I didn't think the recipe was good enough, but just because I didn't have all the ingredients on hand. Still I think I kept pretty true to the recipe. I didn't have parsley so used dried oregano, and instead of finely chopping the onion & garlic, I made them into a paste in my mini chopper, sauteed the paste and then mixed it in with the meat- I just don't like chunks in my meatballs. Also, I didn't have an egg, so skipped it, and I added some basil paste to the meat mixture as well. I also prepared them a tad differently, I just heated some oil in a pan, and rolled them about a bit and cooked them on all sides before putting them into the oven. They came out PERFECT and moist- exactly the way I like a meatball. Thanks for posting the recipe. I'd definitely make it again, and this time make sure I have the proper ingredients on hand.
     
  3. OMG!!!! Just went to a wedding where the most wonderful appetizer meatballs were served by a catering service. I suspected they were made of ground chicken rather than beef or pork, so began a search to find a similar recipe. This is it!!! Followed the recipe to a 't' except I forgot to add the garlic which when added can only make them even more yummy. And I agree with Pvt AmysMom that there is no need for sauce. LOVE, LOVE this recipe...Thank you!!!
     
  4. This was great! The only changes I made were I used mozzarella instead of Monterey cheese and also added Italian seasoning. It was awesome! Thanks!
