Chicken or Turkey Casserole

  • Preheat oven to 350 degrees.
  • Make stuffing according to directions.
  • Put 1/2 of the stuffing in the bottom of an 8x11 baking pan.
  • Shred or chop the chicken/turkey into 1 inch pieces and place over the stuffing layer.
  • Mix soup, mayo, sour cream together and spread over the chicken/turkey.
  • Spread the remaining stuffing over the soup layer.
  • Beat the two eggs with the 1 cup of milk and pour over all.
  • Bake 1 hours.

  1. I make something similar but instead of eggs, mil and mayo, I use 1 cup sour cream and 1 can cream of chicken. I also put all of the stove top on the top of the casserole, but it would still taste the same as being on the bottom. Huge favorite with my family!
     
  2. I made this for a simple dinner last night. It was enjoyed by all except my dd who does not like stuffing (thought she might have outgrown that). DH asked that we add this recipe to the keeper file because it is something he enjoyed. I followed Chef #309422's advice and added a can for drained french style green beans on top of the soup mixture in order to make it more of a complete meal in one. We will be making this dish again. Made as a recipenap for the 24th AUS/NZ Swap Jan. 09
     
  3. Very straightforward to prepare, wonderfully flavoursome and, as there were only two of us eating this, I could stash several meals away in the freezer. I used Recipe #306717 for the stuffing and we enjoyed this casserole with Recipe #89138. I followed the recipe exactly except for using low-fat sour cream and milk which worked fine and adding some of my favourite herbs: rosemary and sage. Certainly I'll make this again, and probably add some additional vegetables (I'm thinking onions, mushrooms and leeks). I'd also like to double the recipe to add some more meals to the freezer. And substitute a tablespoon of wine for some of the soup. Thanks for sharing another versatile and yummy recipe, CoffeeB.
     
  4. Made this lastnite and it was so good. Didn't have sour cream so I bumped up the mayo. Definitely a keeper! Thx for sharing.
     
  5. I made this recipe for supper tonight. It was simple and tasty. I used leftover roasted chicken that we had the night before. Instead of sour cream I used evaporated milk and some of the chicken broth that I saved from the pot last night.
