Chicken or Turkey Pot Pie

"The addition of curry powder add a nice flavour.  We often just eat the filling on top of rice instead of using pie crust."

  • Cook frozen vegetables in 1 cup boiling water for 3 minutes.  Set aside retaining liquid.
  • In a large pot, cook celery and onions in butter until browned.
  • Mix flour and seasonings and blend into the onion mixture.
  • Remove from heat and add cream. Mix.
  • Mix in vegetables, turkey, and chicken broth.
  • Boil to thicken.
  • Add mixture to pie crusts, and top with more crust or mashed potatoes, or serve over rice.
