Chicken Satay

"This is my favorite satay. This will feed 6 as a main dish, 12 to 15 as a snack."

  • Soak wooden skewers.
  • Thinly slice meat and place in a large freezer bag.
  • In a processor combine lemon zest, shallots, garlic, ginger, coriander, cumin, turmeric, sugar, salt, soy sauce and peanut oil.
  • Whirl to a paste, add to meat and toss well.
  • Seal bag and place in fridge.
  • Marinate at least 2 hours, up to overnight.
  • Return meat to room temp before grilling.
  • Skewer meat.
  • Preheat grill to high.
  • For Peanut sauce in a small heavy sauce pan saute the onion, garlic and pepper flakes for 8 minutes.
  • Add remaining ingredients, stir to blend well and cook until heated through.
  • Grill skewers 2 to 3 minutes on each side and serve with peanut sauce.

  2. This was very tastey and pretty easy to make. I found the sauce a little 'chunky' because of the onion. Perhaps I didn't mince enough. However, this tasted great. I hate grilling on skwers, no matter how much I soak they still burn. So I grilled the chicken and then carefully placed it on skewers. That seemed to work well too. Nice little kick from the red pepper flakes.
     
  3. Great party fare! The chicken was nice and flavorful. The sauce made too much and was way too peanut buttery; I would cut the peanut butter in half next time. We added the whole can of coconut milk, extra lime juice and about 2 T. brown sugar to improve the sauce. With tweaking it'll be 5 stars next time. I served the satay with cucumber, celery sticks and plain toast as they do in Thai restaurants. Fun food for a crowd, very much enjoyed!

  5. This satay was pretty simple, with easy to find ingredients (you can't get lemon grass or the like anywhere near here, and I've seen several other recipes with that as an ingredient). It was very tasty, even my picky 4 year old would eat it......yum. Cut back to two shallots, and minced the gingerroot instead of grating. Also added 2 T of lime juice to the marinade, it added more citrus flavor. This will become a regular at our house, THANKS!
