Chili Beef Noodle Skillet

- 1 (8 ounce) package egg noodles
- 2 lbs ground beef
- 1 medium onion, chopped
- 1⁄4 cup chopped celery
- 2 garlic cloves, minced
- 1 (28 ounce) can diced tomatoes, undrained
- 1 tablespoon chili powder
- 1⁄4 - 1⁄2 teaspoon salt
- 1⁄8 teaspoon pepper
- 1⁄2 - 1 cup shredded cheddar cheese
directions
- Cook noodles according to package directions.
- Meanwhile, in a large skillet, cook beef, onion, celery and garlic over medium heat until meat is no longer pink and vegetables are tender; drain. Add tomatoes, chili powder, salt and pepper; mix well. Cook and stir for 2 minutes.
- Drain noodles; stir into beef mixture and heat through. Remove from the heat. Sprinkle with cheese; cover and let stand for 5 minutes or until cheese is melted.

I too had found this in a TOH Quick Cooking magazine from July/August 2001 and have been making it ever since. I love that it's so quick and easy. I think I have also added various beans (chili, kidney, black...) to the recipe while cutting back on the beef. You can also top it with sour cream or greek yogurt. Thanks for posting this! Yummy!
