Ingredients Nutrition


  1. Preheat the oven to 325.
  2. In a small bowl, combine the flour, cocoa and 3/4 cup of the sugar.
  3. In a large bowl, beat the egg whites until foamy.
  4. Add the cream of tartar and the salt to the egg whites.
  5. Beat the whites until billowy.
  6. Add the remaining sugar in, 1 tablespoon at a time, beating continuously.
  7. Add the vanilla or almond.
  8. When all the sugar is added, start adding the flour mix a tablespoon at a time.
  9. (Use only a spotlessly clean rubber spatula).
  10. When all the sugar and flour mix is added, scoop the batter into a 10" UNGREASED tube pan.
  11. Bake 50-60 minutes, until cake tests done.
  12. Let the cake cool 1-2 hours before trying to slice.
