  • 1 12 cups mint chocolate chips (One 10-oz package of Nestle Toll House Mint-Chocolate Morsels, divided.)
  • 1 large egg
  • 34 cup butter, Softened
  • 1 teaspoon vanilla extract
  • 13 cup sugar
  • 12 teaspoon salt
  • 2 14 cups plain flour

  • Melt, over hot (not boiling) water, 1/2 cup mint-chocolate chips, stir until smooth.
  • Cool to room temperature, set aside.
  • In a large bowl, combine butter and sugar; beat until creamy.
  • Add egg and vanilla extract, blend well.
  • Gradually beat in flour and salt.
  • Place 1 cup of dough in a small bowl.
  • Add melted chips; blend thoroughly.
  • Shape into a ball, flatten, (mixture will appear curdled).
  • Cover with plastic wrap.
  • Shape remaining dough into ball; flatten.
  • Cover with plastic wrap.
  • Chill until firm, about 1 1/2 hours).
  • Preheat oven to 375 degrees F.
  • Between sheets of waxed paper, roll each ball of dough into a 13 x 9-inch rectangle.
  • Remove top layers of waxed paper and invert the chocolate dough onto the plain dough.
  • Peel off waxed paper.
  • Starting from the long side, roll up jelly roll stype.
  • Cut into 1/4-inch slices; place on ungreased cookie sheet.
  • Bake at 375 degrees F. for 7 to 8 minutes.
  • Cool completely on wire racks.
  • Melt over hot, (not boiling), water remaining 1 cup of chips; stir until smooth.
  • Spread flat side of cookie with 1/2 slightly rounded teaspoonful melted chocolate.
  • Chill until set.

Hey Everyone! Greetings from Sunny Singapore! I'm am so glad to have found this site. It is waaaayyy better than other sites I've been. I have about 240 cookbooks and my faves are the older cookbooks I got from my mom as I prefer from scratch cooking. I have created several cookbooks dedicated to the use of eggs. I have come across a number of recipes requests for using up lots of eggs. I won first prize with that orange costume! The one with the (fake) Tattoos was taken in Dec 2007 when I again won first prize. I love spicy food and the many different kinds of chilli dips different foods calls for!! Love baking, cross stitching, trying my hand now in shoe beading and patchwork and now doing a course on aromatherapy. Oh and am now trying to raise a flower and herb garden but it is not easy as I am a newbie at that too! In some of my recipes, you will note that there is a letter in brackets at the beginning of the name. This is what it means : (A) : Aromatherapy/Homeopathic/Less toxic I'm not crazy about recipes using pre-mix cakes as I am a more from-scratch person. My recipes will have the local name (when applicable) as well as the anglicised name, eg "Au Nee (Sweet Yam Paste). If I had a month off, I'd be in Texas.
