  1. Combine sugar, cocoa, cornstarch, cinnamon and coffee in an 8 cup measure cup or bowl.
  2. Gradually stir in milk.
  3. Microwave on high 5 to 6 minutes or until it starts to boil and thicken slightly (whisk twice).
  4. Stir in butter and vanilla.
  5. Place plastic wrap on surface of pudding.
  6. Refrigerate at least 2 hours.
  7. Whisk until smooth.
  8. Serve in individual bowls or wine glasses.
