  1. Cake: Stir together first 4 ingredients in a large bowl until blended.
  2. Combine flour and next 3 ingredients.
  3. Add to butter mixture, stirring until blended.
  4. Stir in apple slices and 1 cup pecans.
  5. Spread into a greased 13 x 9-inch pan.
  6. Bake at 350° for 45 minutes or until a wooden pick inserted in center comes out clean.
  7. Cool completely in pan on a wire rack.
  8. Spread with Cream Cheese Frosting; sprinkle with pecans, if desired.
  9. Cream Cheese Frosting; Beat cream cheese and butter at medium speed with an electric mixer until smooth.
  10. Gradually add confectioner's sugar, beating at low speed until light and fluffy.
  11. Stir in vanilla extract.
