Chutney Chicken

"One of my favourite recipes because it tastes so great and can be pulled together in minutes. Steamed rice is a good accompaniment for the yummy sauce."

  • Preheat oven to 360 degrees F.
  • Arrange the chicken in a baking dish large enough to hold all the pieces and season.
  • Combine all remaining ingredients in a bowl and pour over chicken.
  • Bake, uncovered for 1 hour, or until very tender.

  1. very tender, moist chicken. i find it a little too sweet though, maybe due to the chutney i used (mango and pineapple). i like the fact it's baked, so i have time to prepare other dishes (stir-fry broccoli and soup. thanks eve, this is a keeper. oh, i love the allspice - subtle but good!
     
  2. This was a simple and delicious, basically throw together main dish that required little effort but yielded very good results. I found that my chicken was done before the mango/orange juice mixture had formed a glaze, so I removed the chicken and reduced the sauce on the stovetop and it did form a wonderful stickey glaze. Thank you Ev for sharing the recipe.

I moved out here many, many years ago from Ottawa, Canada - so I am blessed in having two wonderful heritages! I suffer from compulsive obsessive behaviour with regard to food and my psychiatrist thought it would be a good idea to find a 'society' where many have the same problem and try to find a cure. So far, I've copied a couple of thousand recipes from this site and my psychiatrist has thrown the towel in and refuses to answer the phone when I call. What did I do wrong? Got 3 kids that keep me on the go - 10 and under at this point (2008) - I may not get round to updating this for a few years, so you'll have to do your own maths. I teach English full-time and Greek Cookery part-time. I would like to make the cooking part of it full-time and the English Grammar part of it part-time. That's all for now.
