Cinnamon Swirl Bread That Actually Works!

- Mix both yeast and water together and proof.
- mix together sugar, butter, eggs, milk, and proofed yeast.
- Add 1 1/2 cups of flour and mix well.
- add the rest of the dough until a stiffish dough forms, cover and let rest for a few minutes then knead for about 5-10 minutes until soft.
- Cover and let rise until doubled in a greased bowl, punch down and let rise again.
- Then roll dough out into a rectangle then brush with a little bit of butter.
- Sprinkle with sugar cinnamon and nutmeg to taste then roll up jelly roll style.
- Place in a greased bread pan, or cookie tray and bake for 30-45 minutes at 375 F or until when tapped it sounds hollow.
- Cover if the top is browning too fast, when you take it out of the oven you may brush the top with extra butter to make a softer crust. Also you may freeze the cooked loaf and re heat in oven covered in foil until thawed and it taste just as good.

This is a great bread recipe. Since others said it made a big loaf, I made two loaves out of it and baked them in loaf pans. this turned out well. I baked them for 30 minutes, covering with foil for the last 10 minutes. I used 1 cup brown sugar and 1 tablespoon cinnamon for the filling. This is such a moist bread. Very good!

This is wonderful cinnamon swirl bread!!! I made the dough yesterday and let it rise the 1st time. I then punched it down and then put it in the fridge overnight. I took it out 1st thing in the morning to let it come to room temperature, otherwise it wouldn't have rolled out right. I then spread a thin layer of butter, not melted, over the dough and sprinkled the cinnamon sugar mixture. I baked it for 30 mins and tapped it on top, it sounded hollow, so I took it out and let it cool a bit. I then sliced two slices and realized it wasn't cooked enough in center. I put it back in the oven for another 20 minutes, and it still could have used a little more time. I also covered mine with foil after about 20 mins, to prevent further browning on top. The only problem I had with the recipe is not a specified amount of cinnamon or sugar, next time I would add alot more cinnamon. Thanks for sharing Anme!!

I'm just a girl whos passion is for cooking, well some people would call it an obbsession rather.... I am a college student at RIT going for food management and prep, my favortie things! Most of my orignal recipes are made from left overs since I cook for one or two most days so there are always left overs in my house. I play mad scientist most days in my kitchen with left over chicken breasts lol. I am also a health food freak and a major gym rat, so I am always on the look out for good subs for the more unhealthy ingredients in most recipes.
