Zesty Citrus Vinaigrette

ingredients
- 1 teaspoon cornstarch
- 3 tablespoons splenda no calorie artificial sweetener
- 1⁄4 cup water
- 2 teaspoons orange peel, grated
- 1 tablespoon orange juice, fresh
- 1 tablespoon lime juice, fresh
- 1⁄4 cup white wine vinegar
- 1⁄2 cup canola oil
- 1 teaspoon salt
- 1⁄8 teaspoon white pepper
directions
- Mix cornstarch, Splenda and water in small saucepan
- Heat over medium-high heat stirring constantly until thickens.
- Set aside to cool, approximate 10 minutes.
- Place orange peel, orange juice, lime juice and vinegar in blender and mix on high briefly.
- Turn blender to low; drizzle oil into juice mixture.
- Add starch mixture to juice mixture; briefly blend on low.
- Season with salt and pepper.
- Can be stored in refrigerator in covered container for up to 5 days.

Fabulous!! I absolutely love this dressing. The flavor is sooooo good with the fresh citrus. I really liked how the stovetop method thickened the whole mixture. The consistency was perfect. I'm so excited to have this dressing on my salads all week. I do wonder if using a product like Stevia would work as well as Splenda, since I have pretty much given up Splenda and exclusively use Stevia. I was afraid to try it the first time around with this recipe though! I'll try it next time, and if it works I'll update my review. As is, this is an excellent dressing and is going into my best of the best file!

Yum, yum, yum! I did not expect this to be so good. I used sugar, and orange muscat vinegar in place of the white wine vinegar I served it over a spring mix with crumbled soft goat cheese, toasted brazil nuts, and dried cranberries. Ridiculously good. I haven't enjoyed a salad that much in a long time. Thanks for a keeper!

Wonderful! Absolutely wonderful! I used to buy a citrus dressing something like this & we thoroughly enjoyed the citrus flavor, but then it was either taken off the market or at least was no longer available locally! This recipe, however, is so much more flavorful than any I've had before, & it definitely a keeper! Thanks for sharing it! [Tagged & made in Please Review My Recipe]

<p><span><strong>I am a stay at home mom to two wonderful boys; Joshua (8years), Kaiden (5 years), and baby GIRL, Madalynn (19 months)! I also have two fur babies (cats); Kobee, AJ; we had to put our youngest cat Sly down Jan 2014. :(. I am also married to my best friend, Jeff and have been since April 2005. I love cooking, hate cleaning and will do whatever I can to get out of it! I love grilling and baking. I do most of the grilling at my house, and bake for almost a week straight at Christmas time! I can make or will attempt just about anything, though I rarely make brownies, my husband's are the best! Homemade breads are not my friend, so I am always working on bread baking.</strong></span></p>
<p><span><strong>As for recipe ideas (besides zaar) Cooking Light Cookbooks are my favorites. I love to make new meals and try new things; it is hard though because my husband is picky when it comes to veggies (and hates seafood); If it were up to him we would have baked-bread crumb chicken and white rice at least one meal a day! Over the past couple years with zaar, I have found tons of new recipes my family normally wouldn’t eat but have been happily surprised with new favorites.</strong></span></p>
<p><span><strong>I love to join in all of the tag games; I haven't been as present as I would like, but as soon as my Jeff is back from working in Ohio I will be back in full tagging mode! </strong></span></p>
<p><span><strong>Cooking is my hobby and passion, I always like to host the family get togethers and volunteer for the potluck dishes. Most of all though are my kids; being home all day with them is fun and challenging, but I wouldn’t trade it for any salary!!</strong></span></p>
