Classy Chicken

ingredients
- 3 boneless skinless chicken breasts
- 1⁄4 teaspoon pepper
- 3 tablespoons oil
- 10 ounces frozen asparagus (fresh broccoli is the best) or 10 ounces broccoli (fresh broccoli is the best)
- 10 ounces cream of chicken soup
- 1⁄2 cup mayonnaise
- 1 teaspoon curry powder
- 1 teaspoon lemon juice
- 1 cup grated cheddar cheese
directions
- Cut chicken into bite-sized pieces and sprinkle with pepper. Saute in oil over medium heat until opaque, about 6 minute Drain.
- Cook broccoli or asparagus until tender crisp; drain and arrange in bottem of casserole dish.
- Place chicken on top.
- Mix together soup, mayonnaise, curry, and lemon juice and pour over chicken.
- Sprinkle with cheddar cheese and bake, uncovered, at 350 for 30-35 minutes.
- Serves 6.

Made this recipe for today and the family loved it. I used canned asparagus, fresh would have been better, but I didn't have any on hand. I made it exactly as directed, except I put the chicken on bottom and arranged the asparagus on top, then covered with the sauce and cheese. Thanks for the great recipe.

I have been making this for years. Tried a few variations on the soups. I always use one can of cream of chicken but second I have used broccoli cheese, cream of asparagus and cream of mushroom and have all turned out. I also add a bit of paprika when cooking chicken 1/4 tsp. If using frozen broccoli put it in casserole dish frozen and add 5-10 more mins cooking time and turns out better then cooked frozen broccoli. We serve it with steamed rice.

With a little change, this is my Mom's recipe. We use 2 cans cream of chicken and no cheese, but we do put croutons on the top. I know almost everyone else would like it better with cheese (but we had 2 members of my family who hated cheese). Also, I always preferred it with about the same amount of broccoli as chicken... about 2 cups of each. This was my Dad's favorite dish. The only reason I give it 4 stars is that these types of casseroles are a bit fattening and kind of old style casserole cooking... but what can I say, good comfort food!

We grew up calling this Elegant Chicken in our house! It’s the most Betty Crocker, Americanized version of a chicken curry dish ever but I absolutely love it and make it regularly! A few family recipe tweaks: We tossed the diced chicken in curry, pepper, salt and a little flour before cooking it in the pan. And we combined the chicken and broccoli (and peas!) with the sauce mixture before putting it in the casserole dish, then topped with copious amounts of cheddar cheese. My mom also added her own spin with browned seasoned breadcrumbs as the final layer on top (after the cheese.) I’m so excited to see this recipe isn’t just in my memory! My mom passed last year, and I haven’t been able to locate the original recipe. Talk about a nostalgic recipe!
