  1. Crush bananas.
  2. Mix bananas, coconut oil, and eggs in a Kitchenaid mixer or with a hand mixer.
  3. Add flour, soda, salt, vanilla and mix again.
  4. Add coconut and chocolate chips and blend in by hand.
  5. Pour into a greased loaf pan (or muffin pan if you'd prefer muffins - cut baking time to 20-25 min.).
  6. Bake for 50-60 minutes in a preheated 350 degree oven.
