ingredients
- 1⁄2 cup peanut butter (crunchy style)
- 1⁄4 cup butter, softened
- 1 cup powdered sugar
- 1⁄2 cup walnuts, chopped
- 1 1⁄2 cups crispy rice cereal (Rice Krispies)
- 1 cup powdered sugar
- 3 tablespoons milk (approximately)
- 1⁄2 teaspoon vanilla
- 1⁄2 cup flaked coconut (approximately)
directions
- Cream together peanut butter, butter and powdered sugar.
- Add walnuts and cereal, mix well.
- Form into balls and put in refrigerator while you prepare frosting.
- Frosting: Combine powdered sugar, milk and vanilla.
- Roll balls in frosting and then in coconut.

I love everything about these cookies. They are so pretty and wintery (is that a word?) looking for a Christmas tray. I made about 4 1/2 dozen so it was time consuming to roll them, chill and then glaze and roll in coconut but well worth it. Next year I will line up the kids and get them rolling too. I used at least a cup of coconut on mine. This will be a regular on my goody trays. Thx Sharlene and Happy Holiday!

It is made from wool flannel, cut into strips a little less than 1/4" and then worked into a linen backing. This is my 3rd rug.
