  • Use heavy aluminum foil cut into large squares. Place equal portions of the fish fillets on each piece of foil.
  • In a saucepan, melt butter. Add lemon juice, parsley, salt and pepper.
  • Stir to blend well. Pour this mixture over the fish, sprinkle with paprika and top with onion slices.
  • Fold the foil around the fish and seal.
  • Grill for 5 to 7 minutes per side. Fish should flake easily when done.

  1. I don't have a grill available this time of year. Can I bake it in the foil in the oven?
     
  2. some of the pics look like there are olives and capers on the fish? but there are non in the recipe. is that correct?

  1. Great recipe. Delicious,healthy, quick and easy. What more could you ask for in a meal. I hate it when people change your recipe before trying it, but I must admit I did drizzle some extra virgi olive oil over the prepared fish before cooking.<br/><br/>thanks for sharing
     
  2. i made this for dinner last night (cod fish was on sale this week). i made a couple of changes tho', i added one chopped tomatoe and seasoned the fish with old bay seasoning. will make this again, but i think a little more seasoning will help. am going to try it with salmon, too. sure is an easy and quick dinner on a hot summer day.
     
  3. No cooking temp provided...cooked at the length suggested on grill at medium-high heat for 5 minutes on both sides and fish come out at 200 degrees Fahrenheit...pure rubber. I'd suggest medium heat for 3-4 minutes on both sides and monitor closely.
     
  4. Ok, so I did it in the oven instead of on the grill. Instead of paprika I put on a little blackened redfish seasoning. I baked it in the foil in a shallow pan at 375 for 20 minutes, turning the packet over after 10 minutes. Some of the butter and lemon juice leaked out into the pan, but when I served it I poured the butter/lemon juice over it. It was AWESOME! Even my husband, who hates fish, liked it!
     
  5. This was REALLY good! I wrapped in foil as instructed but baked in oven as I couldn't use the grill last night. Still turned out beautifully! Will definitely make it again! VERY good!

Tweaks

  1. Really good recipe and really healthy. The only change I made was that I used fresh thyme and chives instead of parsley. I cooked this on my grill in a pie tin covered with foil because I did not want the juices to leak out. So little fat and a lot of flavor, I love the onions! Thanks for posting, Hobbyzu, I'll use this one again.
