Cooked Peanut Butter Icing (Frosting)

"One of my all time favorite desserts is a chocolate cake with peanut butter frosting. My Mom clipped this recipe out of her local newspaper for me to try. I haven't made it yet, but I hope to soon. As written it should frost a 2 layer cake."

  • Combine the sugar, milk and corn syrup in a heavy saucepan.
  • Bring to a boil and cook for about 3 minutes.
  • Remove from heat and place the pan in a larger pan of cold water.
  • Add the margarine, peanut butter, and vanilla flavoring.
  • Beat until mixture thickens to a spreading consistency.

  1. This recipe calls for entirely too much liquid and will never make frosting. Better to call it a sauce However the flavor was good which is why I gave it 2 stars instead if one I was able to turn the sauce into frosting by the addition of TWO bricks of cream cheese
     
  2. The recipe doesn't indicate whether the milk/sugar mixture needs to cool before adding the peanut butter. Any ideas?

  4. I was looking for a peanut butter frosting that wasn't the usual "combine peanut butter with butter and powdered sugar". I'm sure those work well, but adding butter to already fatty peanut butter just doesn't appeal to me. As I didn't want any unpleasant last minute surprises, I made a 1/4 of this recipe this evening to test it in preparation for tomorrow's chocolate birthday cake. It was stupendous. I used natural peanut butter (no sugar, no salt) and added half the amount of sugar indicated and it was still very sweet, perhaps because of the addition of corn syrup. I also added 1/4 tsp. salt since I was using unsalted PB. It reminded me of a Reeses peanut butter cup. I ended up eating most of my "sample" and now have to go for a run to burn off those calories!   1. The liquid should be reduced to 1/3 cup The sugar should be reduced to 1 1/2 cups The corn syrup should be 2 TEASPOONS
     
  2. I do think it needs to cool a bit before adding peanut butter. It was a bit runny. But still very delicious

I am also a fan of NASCAR. I have only been to 2 tracks, Talladega several times and Dover once, but I hope to visit many more. Pocono is only an hour away, so maybe someday! Atlanta is another real possibility with family close by. My furbaby Wickett (a pekinese-poodle mix I had for almost 14 years) went to live at the Rainbow Bridge on April 4, 2007. He was literally my first born child! He will always be in my heart. We have a new dog now, Roxie, who is a Shih-tzu.
