Copycat Olive Garden Zuppa Tuscana

  • In a large soup kettle:.
  • 1. Brown Sasage and crumble - set aside
  • 2. Cut bacon into 1/2" strip and cook in kettle - remove put aside.
  • 3. Drain off most of the fat and saute the onion and garlic in the kettle.
  • 4. Add the chicken stock and bring to a boil.
  • 5. Add the potatoes and cook until almost tender.
  • 6. Add sasuage, bacon and kale and heat back to a boil.
  • 7. Add heavy creamy and stir, cut off heat and let set 5-10 minutes.
  • 8. Add salt and pepper to taste and serve.

  2. My husband isn't into Italian food, so it was a struggle to get him to the Olive Garden. He, of course, was only willing to try the pizza on our first trip. On our second trip I made him promise to try something else. He had Zuppa Tuscana. He was hooked. I figured I'd try to make this for him at home. He LOVED it! "Exactly, exactly, exactly like Olive Garden."

Tweaks

  1. I make this soup even easier by starting with 2 pacages of Knorr Cream of Potato Soup Mix and using less water and using half and half instead of milk as the package calls for. I also add 2 tbs of chicken bouillion and 1 tsp red pepper flakes as I prefer mild italian sausage. I also use yellow onion and red potatoes. I start by sauteing the onion carrot and 1 stalk of celery. When I serve it I top it with fresh grated parm.
