Corn Fritters (21 Day Wonder Diet: Day 6)

"This is Day 6: Breakfast, on the 21 Day Wonder Diet. You can use fresh corn if you prefer, but you need to cook it first, then cut the corn from the cob. This breakfast is to be followed by a mid-morning snack of 2 passionfruit."

  • Whisk egg in a medium bowl; stir in corn, onion, flour and milk.
  • Spray large frying pan with cooking oil. Pour 1/3 cup of batterinto heated pan; cook about 2 minutes or until bubbles appear. Turn fritters; cook until lightly browned on the other side.
  • Serve warm fritters dolloped with cheese, sprinkle with fresh dill or parsley, if you like.

  1. These were okay. We found them very bland even after adding salt/pepper/paprika/garlic powder. May need to broil the red onion to get a caramilized flavour. Might make them again with some extra herbs & spices.

A very quick and easy dish to prepare.As we were eating these as a munchie snack,rather than for breakfast,I didn't use the cottage cheese.I divided my mixture into three,adding some curry powder to one batch,chilli powder to another and leaving the third plain.The curry flavoured fritters got top marks,followed by the chilli.It just goes to show how versatile and adaptable these are. I think chopped chillies or finely diced bacon would be great in them to. I served them with some assorted dips,and they all went down really well. Thanks Sara for a very easy recipe with a multitude of variations and uses!! Made for PRMR.

So far I've found a lot of keepers, and will work at posting them on here. I'm passionate about a lot of things, mainly my kids, animals, and cooking. I won't even start on my peeves, we'll be here all night! lol
