Satisfying Corn Fritters

"Fritters are a pleasing side dish. The sugar can be adjusted if you like things a bit sweeter. The recipe calls for deep frying them, but I have also done them in a skillet with just enough oil to cover the bottom of the pan."

  • In a bowl, combine egg& milk.
  • Stir in corn& oil.
  • Combine flour, sugar, salt& baking powder; add to egg mixture; stir just until mixed.
  • Drop from Tbsp.
  • a few at a time into oil heated to 375 degrees.
  • Fry until golden& cooked through, about 4-5 minutes.
  • Drain in paper towels.
  • Serve hot with warm maple syrup.

  1. I served this as a side dish to go with our Mexican theme dinner, and it was a nice change of pace to have instead of the usual rice dishes. It was a lot easier to prepare than I first thought, too. I didn't deep fry but just pan fried them in my skillet, and they turned out wonderful. Thanks, Ouisey. Made for Spring Pick-A-Chef.
     
  2. Delish! I deep fried, and recommend that you reduce the size a bit at 350 degrees to get the middle done when the outside is nice and brown. Also, I wouldn't hesitate to have these for breakfast with the maple syrup.....might even make me want to get out of bed!!
     
  3. Served these plain with a sprinkle of salt. Do not drop more than 1 tablespoon of batter at a time or the fritters may not fry up effectively (too raw in the middle.) Pan fried rather than deep fried. Served with #116849 for an easy but delicious meal.
     
  4. We thought these were realy good. Made them in lieu of fries for fish and chips. I used only 1/2 t sugar and melted shortening rather than oil.
     
  5. Very nice, simple recipe. I replaced the sugar with a teaspoon of honey and they were delicious. Next time I will double it to make more.
