  1. cook zuch in small amount if water until tender;drain and mash,set aside.
  2. saute onion and bell pepper in 1 tbsp butter until tender.
  3. combine zuch,onion,bellpepper,corn,eggs,ÈÞ$ and pepper, mix well.
  4. pour into greased 1 qt casseole.
  5. combine bredcrumbs,parm cheese and melted butter, and sprinkle over zuch mixture.
  6. bake@ 350 for 40 minutes.
  7. garnish w/tomatoes and parsley.
  8. enjoy!
