- 1 cup self-rising cornmeal
- 3⁄4 cup self-rising flour
- 1 teaspoon salt
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1⁄2 cup vegetable oil
- 1 1⁄2 cups creamed corn
- 2 eggs
- 1 cup sour cream
- 1 cup cheese (Mexican cheese blend)
- 1⁄2 cup jalapeno pepper (optional)
directions
- Preheat oven to 375°F.
- Brush cast iron skillet with vegetable oil and place in oven for about 10 minutes.
- Mix all ingredients in bowl.
- Take skillet out of oven and pour the cornmeal batter in skillet.
- Bake for about 35 minutes.
