  • 1 lb backfin crab meat
  • 1 cup mayonnaise
  • 12 cup light cream
  • 3 eggs, beaten
  • salt and pepper

directions

  • Mix all ingredients lightly and bake in a 1 1/2 quart casserole for 40 minutes at 350.

  1. other than adding a bit of tarragon and cayenne , this is so perfect! definitely for crab lovers. i used jumbo lump crab and really enjoyed this dish. i served it over roasted asparagus, but it would be nice over rice as well.i also gave this recipe to 2 coworkers who are on the atkins diet and they raved about it. thanks bev
     
  2. This was the BEST. I used king crab legs and heavy cream. I also used 4 individual casseroles, baked 2 and froze 2. I sprinkled top with parmaseon cheese and baked for 1/2 hour. It was great. Thanks Bev....this is a keeper.
     
  3. This was very good and I did add about 1/3 tsp cayenne. Also I think next time I'll add 1/2 tsp Old Bay. I used 1lb canned claw crabmeat. This is more like a crab soufflé casserole and my husband and I enjoyed it very much.
