Cranberry Breakfast Muffins

ingredients
- 3⁄4 cup rolled oats
- 1⁄2 cup red river cereal
- 1 cup buttermilk
- 1 cup all-purpose flour
- 3⁄4 cup brown sugar, packed
- 1 teaspoon baking powder
- 3⁄4 teaspoon baking soda
- 1⁄2 teaspoon salt
- 1 egg
- 1⁄3 cup butter, melted
- 1 cup fresh cranberries (Use frozen if fresh are not available)
directions
- Combine the oats, Red River cereal and buttermilk in a large bowl.
- Let stand for 40 minutes.
- Combine the flour, sugar, baking powder, baking soda and salt.
- Add the egg and melted butter to the cereal mixture.
- Add the dry ingredients and mix well.
- Stir in the cranberries.
- Spoon the batter into the prepared muffin pan.
- Bake for 20 to 25 minutes or until the top springs back when lightly touched.

Firstly, this recipe doesn't give a temperature for baking. I wasted some time having to look up other recipes and took the average temp from about 3 other recipes I have. They turned out just OK. Pretty tasteless. If I were to make them again, which I won't, I'd add some spices to what's given here.
