- 2 cups all-purpose flour, sifted
- 1 cup sugar
- 1 1⁄2 teaspoons baking powder
- 1 teaspoon salt
- 1⁄2 teaspoon baking soda
- 1⁄4 cup butter or 1/4 cup margarine
- 1 egg, beaten
- 1 teaspoon orange rind, grated
- 3⁄4 cup orange juice
- 1 1⁄2 cups fresh cranberries, chopped
- 1⁄2 cup walnuts, chopped
directions
- Sift flour, sugar, baking powder, salt and baking soda in a large bowl.
- Cut in butter until mixture is crumbly.
- Add egg,orange peel and orange juice all at once; stir just until mixture is evenly moist.
- Fold in cranberries and walnuts.
- Spoon into a 9 x 5 x 3 inch loaf pan.
- Bake at 350 degrees for 1 hour and 10 minutes or until toothpick inserted comes out clean.
- Remove from pan and cool on wire rack.

i searched through all the similar cranberry cake recipes on this site, and this one is definitely the winner. simple, straightforward and DELICIOUS! the light flavor of orange is perfect, as well as the amount of cranberries - any more and it would have been falling apart. thanks so much Theresa/Thunderbird for posting!
