Cranberry Salad Dressing

"Beautifully-colored salad dressing works well with greens and is also great over bananas and pears. Recipe makes 2 1/2 cups so it's great for large get togethers."

  • Process all ingredients except oil in a food processor or blender; with motor running, gradually add oil in a steady stream.

  1. A++++++++. This was super easy to make and had a great flavor. I did a trial run with my parents and husband...they loved it. Sweet, but not too sweet, tart and creamy and absolutely delicious. I only had lemonsso I substituted the lemon for the orange. We had it on spinach with feta and julienned carrots and walnuts. MMMMMM. My husband liked it so much he kept dipping veggies in it (may make with less oil for a dip). Will be bringing it to Thanksgiving Day. Thanks for the keeper.
     
  2. This is not only the prettiest dressing I've ever made but it's hands down the best - I'm so glad it made so much. I used 3/4 C of oil and had it over a garden salad. It whipped up so quickly in the blender it was no problem to make for a quick lunch. Thanks for posting this!

  4. Totally amazing! Tangy, sweet...awesome. Used dried cranberries (since it wasn't specified) and it worked! Also, I didn't have cider vinegar, but I did have apricot/thyme white wine vinegar...extra good zing! Went on a green salad with bacon, cranberries, oranges, and pecans. A huge hit with the Christmas morning gang! Thanks!

  2. LOVED IT! For the holidays I make a green salad with dried cranberries, mandarin oranges, feta, purple onion, and candied nuts (recipe #144963) ... well, this year I forgot to purchase dressing. So I jumped online and found this recipe, which was far better than anything I could have bought! I used 3/4 c. frozen and 1/4 cup dried cranberries, since that was what I had. Also, I used a small container of mandarin oranges instead of the navel orange, and because of that I reduced the sugar to 1/3 cup. Finally, I used only 3/4 c. of olive oil because I prefer a less oily dressing. Mixed up in the blender in no time flat, made a very generous amount, and kept well in the refrigerator for two different events 5 days apart. I will never buy bottled cranberry dressing again!

Among my favorites though, are: Recipes 1-2-3, by Rozanne Gold, a collection of recipes containing no more than 3 ingredients (excepting water, salt and pepper); A Treasury of Great Recipes, by Mary and Vincent Price, recipes collected from friends and chefs of great restaurants around the world; The Mediterranean Diet Cookbook, by Nancy Harmon Jenkins, about a collection of cuisines I’m convinced are the healthiest in the world and The Low-Calorie Gourmet, by Pierre Franey. Currently my passions are our dogs, the garden, cooking, the natural world and of course, Dh. I can now add Zaar to that list of passions (translate: addiction). We have three dogs, two rescued and one adopted. They are Sugarpea, a Golden Retriever, Chickpea, a Llasa Apso and Sweetpea, a Shih Tzu; small, medium and large. We’re quite a sight out on the trail. One of the things I am most fond of about living here is the ability to vegetable garden year ‘round.
