Cream Cheese and Pumpkin Muffins

  • Heat oven to 400 degrees F.
  • Grease bottoms only of 12 medium muffin cups or line with paper baking cups.
  • Mix eggs, pumpkin, milk and oil.
  • Stir in remaining ingredients (except cream cheese filling) just until flour is moistened.
  • Fill muffin cups 2/3 full.
  • Cream Cheese Filling: Mix cream cheese, sugar and milk until smooth.
  • Divide Cream Cheese Filling among muffins, placing about 1 teaspoon on top of each; swirl with knife.
  • Bake 20 to 22 minutes or until golden brown.
  • Immediately remove from pan.

  1. Very yummy recipe. I would add pumpkin pie spice or cloves/ginger next time to make them a bit more "spicy." Also, my co-worker thought they would be wonderful sprinkled with brown sugar...

I am a busy single mom of 5 growing boys!! My children's ages are 21,18,14,12 and 10 1/2. In my spare time,when I have any, I try to walk 3 miles a day.I like to read Woman's World and inspirational books and if I didn't have 5 beautiful boys to care for, I would probably be doing missionary work. I live in the beautiful Okanagan Valley in British Columbia and I swear we must be living in Heaven on earth!!!I would love to travel if I had the resources and time with Brazil and South America being on the top of my list of places to see.
