Directions

  1. Chop vegetables.
  2. Saute Zucchini until transparent.
  3. Add potato, spinach, broccoli, parsley and vegetable stock.
  4. Bring to boil, reduce heat, cover and simmer 20 minutes.
  5. Allow to mildly cool, blend in small quantities in blender then return to pot.
  6. Reheat gently and stir in cream.
