Creamed Corn Casserole

- 1 (8 ounce) can whole corn, drained
- 1 (8 ounce) can creamed corn
- 1 (8 ounce) carton sour cream
- 1 (8 1/2 ounce) package Jiffy cornbread mix
- 1⁄2 cup butter, melted
- 2 eggs, beaten
directions
- Mix all ingredients in a buttered 8" square baking pan (glass pans work best).
- Stir until all ingredients are mixed well.
- Bake 1 hour at 350 degrees F, or 15-18 minutes in a microwave on full power.
- Refrigerate leftovers.

I made this recipe for Christmas dinner. I didn't have Jiffy mix so I made it completely from scratch using 2/3 cup flour, 1/2 cup cornmeal, 3 Tbsp sugar, 1 Tbsp baking powder, and 1/4 tsp salt. I only had frozen corn so I used two cups cooked and drained and an additional 2 cups blended with ½ cup milk. Turned out great- Excellent recipe!

I would call this Corn Bread Delight instead of Creamed Corn Casserole due to the bready texture as opposed to any mushy or soupy textures. This was very good - don't get me wrong, I just think it isn't named properly. Corn bread is the main ingredient not creamed corn. You get more of the bread pudding feel instead of a casserole. It can be served as a side dish, but know that it is a bit on the sweet side. It is very yummy and I will make it again! A dallop of honey adds the right kick too! ;)

Hi, I live in Hot Springs, AR, but originally hail from the great windy city, Chicago. I have a house full of animals, all rescues, 8 parrots, 4 dogs and a cat. I am passionate about animals, especially ones that have been abused and neglected. If I had the money, I would buy a farm and fill it with animals that needed homes. I've been this way since I was a child and it seems I have passed my passion on to my daughter. How my poor husband puts up with us I don't know, buy he's a great guy and pitches right in with all the animals. He's a chef at a local resort (and an assistant zoo keeper when he gets home...lol).
