  • Slice 4 large leeks into 1/4 inch rounds(white part only).
  • Saute leeks in 2 tablespoons butter in a until wilted.
  • Add a cup of chicken broth and boil liquid down by half.
  • Add cream, salt, and pepper and reduce until thick and perfect.
  • Add a dash of cayenne and a few drops of lemon juice.

  2. Thinking about making this using Trader Joe's frozen leeks...did anyone hear use frozen leak & if so how much did you measure for 1 leek? Thanks!

I simply *love* this recipe, I increased the butter and also sauteed 2 tablespoons fresh minced garlic in with the leeks, used fresh ground black pepper (lots of pepper!) my DH was lucky he got a little of this I ate almost the whole thing myself, so good, thank you for sharing hon!...Kitten:)
     
  4. Very quick and tasty - made for ZWT3 and our lunch today! I did not cook these in broth however, and DH is not keen on cayenne pepper, so they were just creamed leeks - but as leeks are so sweet and fresh now, that was all to the good!
     
  5. I will accept some of the blame for why we didn't like this recipe. After simmering, actually boiling, for almost 40 minutes the chicken broth for some reason wasn't reduced enough, but it looked like half to me. So, I added the cream and boiled some more, and some more and some more, until I had a soupy, saucy pan of leeks. What did I do wrong that obviously everyone else did right. The taste was fair, and while my DH ate his since he likes onions cooked any way at all, I left mine on the plate. I have to tell the truth, so I apologize for my incompetance and this poor review.

Tweaks

  1. I've made this exactly as per the recipe (loved it - absolutely delicious!!) and I've also added pre-boiled potatoes, cut into 1 cm cubes, at the same time as the cream, when I wanted a dish that was more of a substantial side - it filled the role of both vegetable and starch. The potatoes also helped the sauce to reduce and thicken. At the end, I added a little nutmeg, and also some chopped parsley, mostly for visual appeal, since otherwise it looked a bit too white.
     
  2. So simple and sooo delicious! Made on a whim to go with grilled salmon, only because leeks looked good at the store. The measurements are VERY forgiving, I'd say. I used 2 leeks instead of 4 and totally estimated the rest of the ingredients - just pouring cream in, grinding salt and pepper, sitting outside with wine while it cooked, etc. As I came in to taste test, it just got better and better. I just posted the recipe on FB! It's simply wonderful!
     
  3. I boiled the leeks briefly for a few minutes, hence less time in the pan to complete the dish. Very easy - will use again.
     
  4. Made this to accompany roast chicken, substituted the cayenne with paprika and crumbled in half a beef stock cube, great result!

The joy of my life are my 2 sons, born in Dec. 00 and Jan. 04. I am currently a stay at home mom and love to make homemade meals and treats for my family. I am also a fan of NASCAR. I have only been to 2 tracks, Talladega several times and Dover once, but I hope to visit many more. Pocono is only an hour away, so maybe someday! Atlanta is another real possibility with family close by. My furbaby Wickett (a pekinese-poodle mix I had for almost 14 years) went to live at the Rainbow Bridge on April 4, 2007. He was literally my first born child! He will always be in my heart. We have a new dog now, Roxie, who is a Shih-tzu.
