  • In a 5-6 quart Dutch oven over moderate heat, melt the butter in oil. Add the chicken and lightly brown, stirring occasionally, about 5 minutes.
  • Add the stock, carrots, celery, onion, rice, parsley, salt, and pepper. Cover, bring to a simmer over low heat, then cook until the rice is tender, about 20 minutes.
  • Blend cornstarch into the half n half with a whisk. Add nutmeg, and whisk again. Stir slowly into the simmering soup. cook, stirring, until the soup returns to a simmer and thickens, about a minute more.

  1. Delicious and a recipe that I know we'll be enjoying often. Having already made - and greatly enjoyed - breezermom's Recipe #328649 and Recipe #328668, I really just had to try this recipe. Naturally, I made this with Recipe #328649! :) Wonderfully flavoursome and very much a complete and very satisfying meal. I made only a few variations. As an incorrigible garlic-lover and mushroom-lover, I added 4 cloves of minced garlic, 2 cups of sliced mushrooms and some thyme. I also used unsalted butter instead of the margarine which I very much prefer in cooking. Thank you so much for a trio of super chicken stock/soup recipes, breezermom! Made for Zaar Stars Tag.

  3. Made for the FFF Best of 2015 as a fave of LifeIsGood ? After reading all the reviews, I took some small liberties w/your recipe, but they certainly did not harm the outcome. Like other reviewers, I used wild rice. I also used regular milk vs half & half & that likely improved the nutrition info a bit. I also added 1 small can of sliced mushrooms w/their liquid. The thickening combo of the wild rice plus the cornstarch made this veggie-rich soup a creamy 1-dish meal in a bowl that I served w/baguette bread. Thx for sharing this recipe w/us. Yum!
     
  4. Excellent soup! I'm tucking this into my best recipe file. It was easy to make and I loved the taste and consistency. I loved the rice and cream...yum. I think I will double the recipe next time so there will be more leftovers! I might omit the nutmeg next time, too - just personal taste. It's really a wonderful soup! Thank you!
     
  5. A really good soup that was simple enough to put together. I love the addition of the rice for a change too:-) I will say I was a bit hesitant about adding the nutmeg, but the taste comes thru very subtle. I used 1 pint of canned turkey also in place of the chicken breasts. Really a quick throw together soup for me and wonderful this time of year. Made for Soup's On in the Diabetic Forum~

  1. I have a phobia of cooking chicken on the stove so I used rotisserie. I sautéed the onions in butter and then added the carrots and celery. Once those were a bit soft I added chicken bone broth, parsley, wild rice, chicken, salt, pepper, and some cumin. Followed the directions exactly from there. This was my fourth time making it. It’s such a hit in this house that this time I doubled the recipe.

  3. Wonderful comforting soup, that screams for you to sit down, bundle up with a blanket and put your feet in those fuzzy, warm slippers. Easy enough to put together, with loads of taste, and goodness all melded together to make a delicious and satisfying soup. I didn't change anything except use real butter in place of margarine, and halved the amounts for a smaller family get-together. This was perfect and I wouldn't change anything.
