- 1 (5 ounce) can evaporated milk
- 1 (3 1/2 ounce) package instant lemon pudding mix
- 2 (8 ounce) packages cream cheese, softened
- 3⁄4 cup lemonade concentrate
- 1 graham cracker crust (9 inches)
directions
- In a mixing bowl, combine milk and pudding mix; beat on low speed for 2 minutes (mixture will be thick).
- In another bowl, beat cream cheese until light and fluffy, about 3 minutes.
- Gradually beat in lemonade concentrate.
- Gradually beat in pudding mixture.
- Pour into crust.
- Cover and refrigerate for at least 4 hours.

This was one of the pies I made for a family picnic today. I was worried that there was no added sugar except for the sweetness of the pudding. In hindsight for me, I was correct. I found the flavor to be a little too tart. This was split, some said it was perfect, others puckered their lips (including me). I will make this again, because it's simple and deserves a place on any picnic table. Next time, I may add 1/4 to a half cup sugar to the cream cheese before I whip it, or decrease the amount of the lemonade concentrate to 1/2 cup. Thanks Miss Annie, this is a recipe that is worth tweaking!
