  • Heat oil over med heat; cook onion& garlic for 3 minutes.
  • Puree tomatoes and add to saucepan along with hot pepper flakes; bring to a boil.
  • Reduce heat; simmer uncovered for 20 minutes or until thickened.
  • Add parsley and oregano; remove from heat.
  • In blender, puree ricotta and milk until smooth.
  • Stir in tomato mixture.
  • Meanwhile, cook penne til tender.
  • Drain; toss with sauce.
  • Season with salt& pepper.
  • Sprinkle with parmesan cheese.

  2. I used my own sauce, but added the ricotta and milk from the recipe and it was very good! Thanks for the idea and next time I will try the whole recipe. Carole in Orlando
     
  3. Used chopped tomatoes (undrained), 2 tsp dry parsley, 2 tsp dry oregano, 1 cup cottage cheese and no milk. Once it was all cooked, I blended it all with a hand-blender. Tasted great! Served with whole wheat and regular penne pasta and garlic-cheese biscuits.
     
  4. This is so delicious! I almost always have a little bit of leftover ricotta living in my refrigerator and this is a terrific way to use it before it expires. I used canned tomato puree instead of whole tomatoes and I used dried herbs. Very fast and easy!
     
  5. I have made this twice so far. It is helpful as it is a quick meal, and very satisfying. Also a good way to utilize ricotta which might go unused. My 7 year old really likes it too. A keeper!

I love to cook and so I am thrilled that I found recipezaar. I work as an educational assistant in a food school so I am around food all day long. I have four children, three of which have already flown the coop so to speak but I still have my 'baby' at home. (He's 21). I am lucky in that I have my summers off so I spend a lot of time trying new recipes and catching up on my reading. I also play soccer in a ladies league to stay in shape.
