  1. In a large pot, saute the onions and leeks until translucent. Add the potatoes, garlic, salt, pepper, spices, broth and bay leaf.
  2. Simmer for 15-20 minutes (until the potatoes are tender).
  3. Stir in coconut milk and lemon juice.
  4. Blend carefully until the soup is smooth and creamy. (You can also leave it chunky or a combination of the two.
  5. Garnish with finely chopped green onions, cilantro or anything that strikes your fancy.
