I made a whole chicken, and sprayed with olive oil spray instead of the butter. It seemed to work okay and browned the chicken pretty good. I cooked at 350 for 1 hour and 15 minutes, and it was nice and brown and juices were running clear. I ate half for dinner, then saved the rest to make chicken sandwiches. After having this recipe, I can see myself making this a few times a month. Great chicken!

I made this for dinner this evening and it was wonderful. My children are VERY picky eaters and my 14 year old picky daughter told me two times during dinner just how much she loved the chicken! Normally I have to go out and buy chicken for them to eat it. Now I have a great alternative to buying carry out chicken.
