ingredients
- 1 lb boneless round steak, cubed
- 1 (14 ounce) can diced tomatoes, do not drain
- 24 fluid ounces beef broth
- 3 beef bouillon cubes
- 2 medium potatoes, peeled and cubed
- 2 medium onions, chopped
- 2 celery ribs, sliced
- 2 carrots, chopped
- 1⁄2 teaspoon basil
- 1⁄2 teaspoon oregano
- 1⁄2 teaspoon thyme
- 1 bay leaf
- 1⁄4 teaspoon pepper
- 1 cup fresh peas or 1 cup frozen peas
directions
- Place all ingredients in crock pot.
- Cover and cook on low for 7-8 hours.
- Remove bay leaf before serving.

I knew I should have looked at your recipes first ;-) This was so good, DH had seconds even though he is "suppose" to be on a diet! The soup has excellent flavor. Rich and beefy. It was too easy to make (I don't feel guilty though). I did cheat on one ingredient. I used frozen meatballs instead of the round steak.....still turned out delicious. MizzNezz...you are a wonder! Thanks for sharing this great recipe.

This was terrific. I added a leek and oven-roasted the onion, carrot and beef to brown them before putting in the crockpot. I would suggest two cans of drained tomatoes rather than one drained becuase i think the water they come in tastes like tin. I also see no reason to peel the potatoes - the skin is where all the minerals are! I used a good boxed beef broth for the same reason, and a beef base instead of bouillon. It was just terrific, my husband really loved it.

After DH and I moved away from the farm, and to the city...I haven't done as much cooking and very little canning. But I do come to Zaar and look for new recipes once in a while. I'm still cooking Zaar!!
I like to play at Facebook, with my family and friends. A lot of my Zaar friends are there!! Yay! It's a good way to keep in touch.
We travel more. We're looking at the European trips now. Hope to go in the springtime. I really want to see London, I think I lived there in a past life, I've been obsessed with it since I was 10 years old!!
